Our natural pork-bone soup is skimmed to perfection so that the ultimate flavor of pork is drawn out.
ICHIRAN’s special raw noodles are made from a unique blend of quality flours, with the foremost consideration being synergy with our soup.
Additionally, our original aged “Original Spicy Red Sauce” is a chili-powder based blend of 30 different ingredients that is added to our ramen to bring out a more rich taste.
ICHIRAN was the first to add a spicy red sauce directly onto ramen.
We make our special chili sauce by blending together 30 different spices and ingredients and aging it over days and nights. This allows the sauce to develop a richer, more complex flavor that enhances our ramen.
Dashi is the backbone of all ramen.
Only 4 people in the company know our secret dashi recipe. To protect this recipe, we make our dashi in under a strictly controlled system.
Dashi is such a key ingredient that even a slight change in the water content due to evaporation will change the flavor of the ramen. To prevent this, we take extreme care with our dashi so that the last bowl we make tastes just as good as the first.
Our creamy soup is made using a technique developed by our craftsmen through years of research to draw out the robust flavors of the pork bone broth.

With ICHIRAN’s unique process, our tonkotsu broth is infused with natural collagen – an added benefit to our delicious broth.
Our noodle experts have an abundance of experience make our noodles fresh, in-house every day. We start with our own ramen noodle flour mix. Every detail from the temperature and humidity of the room to the protein content of the flour is carefully measured and controlled. We even adjust the temperature of the water depending on the season.
Since fresh noodles are very delicate, we make sure that our noodles are handled with extreme care.
The finished products are stored in special boxes so they are not exposed to air until they go into the noodle boiler. Even when our restaurants are at their busiest, we limit the quantity of noodles that we take out of the special boxes to sit at room temperature.
The temperature of the noodle boiler is always maintained at a consistent level with the use of special sensors.
We also carefully control the quantity of hot water added to the boiler (i.e. only 110-150 cc every ten seconds) to ensure that the water in the boiler stays clean.
Because our noodles are very delicate, we drain the noodles using a noodle shaker, shaking it exactly 3 times – never more or less. We will never serve noodles that do not meet our standards to our guests.
Our fresh noodles are very time sensitive. Once in the boiling water, they expand. Therefore, we strive to deliver your ramen from kitchen to your table within a fifteen second window so that you can enjoy the exact texture you ordered. We have a rule about how long it takes for our noodles to reach a guest’s table. Anything over that limit is unacceptable, which is why all seats are within arm’s length. The time? 15 seconds.

Why not try a “noodle refill,” a unique aspect of Hakata’s culture?
First mix the noodle refill and small quantity of broth it comes with, sampling them before transferring to your bowl.
With each bite, the gently sweet taste and aroma of the noodles will unfurl across the palate. The noodles can then be dipped in the remaining broth for further enjoyment.
Incidentally, ordering a noodle refill after eating half of your noodles will ensure that your new noodles are ready just as you finish your first serving.

Secret tips to skip the line at Ichiran Shibuya
Ichiran Ramen is one of the most popular Japanese ramen brands, and especially, lots of visitors stand in long queues in front of the restaurant. Can you stand patiently in the queues for around an hour? Here are two tips to avoid queuing for a long time at Ichiran Shibuya.
1. Visiting Ichiran Shibuya early in the morning or late at night.
If you go there during busy hours such as lunch and dinner time, you may need to wait for more than an hour. However, you can have Ichiran ramen early in the day (for instance, 6:00–9:00 a.m.) or late in the night (for instance, 0:00–2:00 a.m.) since Ichiran Shibuya is open 24 hours everyday!
2. Change your destination from the Ichiran Shibuya to Ichiran Shibuya Spain-zaka: another branch which is very close to the branch but less-known.
Ichiran Shibuya Spain-zaka is located within 3 mins walking distance from Ichiran Shibuya, where you can enjoy the same ramen as that of Ichiran Shibuya. You always don’t need to wait for more than 5 mins since the hidden branch is less known by foreign tourists. Of course, Ichiran Shibuya Spain-zaka is also open 24 hours everyday.

Personally, I choose the second option: visiting the branch of Shibuya Spain-zaka, and I haven’t queued for more than 5 mins ever. To fully enjoy Ichiran Ramen, it’s not still enough to get to know those tips above to skip the line. The order system of Ichiran is a little different from that of other ramen restaurants. How to Order and Enjoy Ichiran Ramen
1. Buy a ramen ticket with a vending machine

At first, you need to buy a ramen ticket with a ticket-vending machine instead of placing an order with waitstaff. Ichiran offers two major menu: the special “Ichiran Select 5″ (1,490 yen) and the regular “Ramen” (890 yen). The “Ichiran Select 5” is based on the regular ramen including additional toppings such as a boiled egg, kikurage (wood ear mushrooms), sheets of dried laver seaweed and Char-siu pork.

2. Personalize your ramen
A staff guides your to an individual seat which is partitioned by table dividers (if you are groups, the dividers can be opened). A piece of paper as an order sheet is given when you have a seat, which you can personalize your ramen with: from richness of broth and noodle texture to the amount of garlic and spicy red sauce. 3. Press the little button on the table to hand in your sheet to staff after filling the sheet
4. Help yourself to a glass of water
Each individual booth has water tap and some glasses.
5. Enjoy Ichiran Ramen
All you need is to enjoy eating your Ichiran ramen after it is served. If you order the Ichiran Select 5, the ramen and toppings are served separately. Let’s add the toppings to the bawl of ramen (peel the shell of the boiled egg). Don’t forget to take a nice picture of your completed ramen!
6. Order extra items
If you want additional toppings and side dishes such as pork belly slices, boiled egg and green onion, order with the other side of the order sheet, which is for extra item orders. Circle the point on the sheet and press the little button as your first order.
